Pineapple Cream Cheese Cake
Cheesecakes are a wonderful addition to any meal other gathering. This is an easy to put together cheesecake, the taste is light and bright with the pineapple.
1 C. sugar
1 Tbsp. cornstarch
1 9 oz. can crushed pineapple
1 8 oz. pkg. cream cheese, softened
1 tsp. salt
2 eggs
1/2 C. milk
1/2 tsp. vanilla
1 9-inch unbaked pie shell
1/2 C. nuts
Blend 1/2 cup sugar and cornstarch; add pineapple. Cook, stirring constantly, until thick and clear; cool. Blend cream cheese, remaining sugar and salt; add eggs, 1 at a time, stirring well. Blend in milk and vanilla. Spread pineapple mixture in pie shell; pour in cream cheese mixture. Sprinkle with nuts. Bake at 400 degrees for 10 minutes. Reduce oven temperature to 325 degrees then bake for 50 minutes longer.
