This is Mississippi Mud Cake that my grandmother has made as long as I can remember. My grandmother can make a cake like no one else, this is one of her most requested recipes. 1 cup butter (2 sticks butter)
2 C. sugar
1/2 C. cocoa
Add 4 eggs – 1 at a time
1 1/2 C. flour
1 tsp. baking powder
1 C. nuts
1 C. angel flake coconut
Bake in an oblong pan at 350 degrees for 30 to 35 minutes. Spread one jar of marshmallow cream on top as soon as cake is removed from oven. Let stand until cooled.
Icing
1 sick butter melted
1/3 C. cocoa
6 tsp. pet milk
1 box powered sugar
1 tsp. vanilla
Icing needs to be thin enough to be poured over cake in order to get it without messing up the marshmallow creme. Add a little extra milk if necessary. Sprinkle with chopped pecans over the top.
