Mandarin Magic Cake

This is my favorite cake. Be sure to keep this one refrigerated at all times. Source Virginia McDowell. Jefferson City, Mo. 1980.

1 box yellow cake mix
4 eggs
1 can mandarin oranges with juice
1/2 C. salad oil

Beat all ingredients together for 3 minutes. Bake at 325 degrees in a 13×9″ pan that has been greased and floured. Bake or 24-30 minutes.

Frosting

1 9-oz. carton Cool Whip
1 15 1/4 oz. can crushed pineapple with juice
1 3/4-oz. box vanilla instant pudding
Combine all ingredients and spread on cooled cake. Be sure to store this cake in the refrigerator.

    We call it a Pea Pickin’ Cake. I got this recipe from my best friends mother before she passed away. Now it’s my boyfriends Favorite and he doesn’t even eat cake. Only difference is we use pilsbury yellow cake mix with the pudding already in it and follow the directions on the box.
