Luby’s Hawaiian Pie
Luby’s is one of the better known cafeteria style restaurants. One of the best parts about going to the cafeteria is the wonderful dessert choices that you have. You can make a Luby’s Hawaiian Pie, just like they do. This tropical inspired pie has pineapple, coconut and more inside. You can make this recipe at home.
1/3 C. Butter
1 1/2 C. Sugar
3 Eggs
2 Tbsp. Flour
2 Tbsp. Cornmeal
1 1/4 C. drained, canned, crushed Pineapple
1 1/4 C. Coconut
1 tsp. Vanilla
1 unbaked 9-inch Pie Shell

Heat oven to 350 degrees. In medium bowl, beat together butter, sugar, eggs, flour, and cornmeal until well blended. Add pineapple, coconut, and vanilla. Mix well. Pour into pie shell.

Bake 45 minutes or until wooden pick inserted in center comes out almost clean.
