Humming Bird Bread

This cake is so delicious your family will be going back for seconds!


  • 3 cup Flour
  • 2 cup Sugar
  • 1 teaspoon Baking soda
  • 1 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 3 Eggs, beaten
  • 1 cup Vegetable Oil
  • 1 1/2 teaspoon Vanilla
  • 1 8-ounce can crushed pineapple undrained
  • 1 cup chopped Pecans
  • 2 cup mashed Bananas
  • 1 8-ounce package softened Cream Cheese
  • 1/2 cup softened Butter
  • 1 1-pound box Powdered Sugar
  • 1 teaspoon Vanilla



Combine first five ingredients; add eggs and oil, stirring until moistened. DO NOT BEAT Stir in vanilla, pineapple, pecans and bananas. Bake in three 9-inch round layer pans at 350 degrees for 25 to 30 minutes. Cool in pans 10 minutes Turn out and cool completely Frost with cream cheese frosting. Sprinkle 1/2 cup chopped pecans on top.


Beat ingredients until fluffy Spread between layers, on sides and top of cake.
