Fruit Cocktail Cake

Source Minnie McDowell. Jefferson City, Mo. 1966. This recipe comes from my great grandmother, and it goes great with some Cool Whip.


1 egg beaten
1 tsp. vanilla
1 C. sugar
1 C. flour
1 tsp. baking soda
a dash of salt
1 lb. can fruit cocktail
1/2 C. brown sugar

Beat egg, vanilla, and sugar together. Then add flour, baking soda, salt, and fruit cocktail. Put in greased baking pan 8′x8′. Sprinkle with brown sugar and 1/2 cup pecans. Them sprinkle with cinnamon and dot with butter. Bake at 375 degrees for 30 minutes.
