Creme De Menthe Cheesecake
This is great after a spicy meal, it makes for a nice change.
2 8 oz. pkg. cream cheese
1/2 C. sugar
1/2 tsp. vanilla
2 eggs
4 tsp. green Creme de Menthe
1 ready made Keebler Chocolate Flavored Pie Crust
Mix cream cheese, sugar, and vanilla at medium speed with an electric mixer until well blended. Add eggs, mix until blended, and then blend in Creme De Menthe. Pour into piecrust. Bake at 350 degrees for 40 minutes or until center is almost set. Cool. Refrigerate 3 hours or overnight.
