Cheese Pies
This is not your typical sweet treet. This cheese pie is made with feta cheese and phyllo dough, this makes a perfect appetizer for your next party.
1 lb. feta cheese
3 eggs, beaten
1 Tbsp. olive oil
1 Tbsp. chopped parsley
1/2 lb. butter, melted – not hot
1 lb. pkg. phyllo dough
Mix the ingredients for the filling. Open the phyllo sheets on your counter and work quickly. Place a sheet of dough on the counter and quickly brush it with some melted butter. Place another sheet on top of it and brush with a little more butter. Place 2 tablespoons of filling onto the dough sheet and roll it up in the dough. Use wide rolls rather than narrow ones. After two rolls, fold one side to the center, thus giving you a neat package. Continue rolling and place the package, seam side down on an oiled baking sheet. Brush the top with more butter and continue with the next one. Bake at 400 for 25 to 30 minutes, or until they are golden brown.
