Banana Cake – this is a family favorite.
This is a delightful and moist cake. Recipe comes from Sue A. Mertens Minick from Hazelwood, MO. She actually found this site on the internet! And yes, she is family
1/2 C. Shortening
1 1/2 C. Sugar
2 Egg, beaten until fluffy
2 C. Flour
1/4 tsp. Baking Powder
3/4 tsp. Baking Soda
1/2 tsp. Salt
1 C. mashed Bananas
1/4 C. Buttermilk
1 tsp. Vanilla
1 1/2 C. Sugar

Cream together shortening and sugar until light and fluffy. Add eggs in, and mix well. Sift together the dry ingredients, and add this to the creamed shortening mixture. Add bananas, buttermilk and vanilla. Beat until well mixed. Bake at 350 degrees for 30-35 minutes.
