Applesauce Prune Cake
Recipe from Ethel Eynard. Jefferson City, Mo. 1998.
2 C. sifted flower
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
1/2 C. shortening
1 C. sugar
1 egg
1 C. thick applesauce
1 C. finely diced prunes
1 C. chopped walnuts (optional)
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
1/2 C. shortening
1 C. sugar
1 egg
1 C. thick applesauce
1 C. finely diced prunes
1 C. chopped walnuts (optional)
Preheat oven to 350 degrees. Sift flour, baking soda, salt, and spices together. Cream shortening, add sugar gradually until mixture is light and fluffy. Beat egg well and add to creamed mixture. Add applesauce, prunes, then the flour gradually. Add nuts last if you desire, beating well after each addition. Pour into a greased and floured 9 by 4 by 3 inch baking pan. Bake for about 50 minutes or until done.
