Ingredients

Meringue Pie Shell

  • 3 egg whites
  • 1/8 teaspoon salt
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon vanilla extract
  • 3/4 cup sugar
  • 1/3 cup chopped walnuts

Filling

  • 4 ounces butter
  • 3/4 cup sugar
  • 1 ounce unsweetened chocolate
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 cup heavy whipping cream
  • 1 tablespoon creme de cacao

Topping

  • 2 cups heavy whipping cream
  • ¼ cup powdered sugar
  • 2 tablespoons creme de cacao or vanilla extract

Instructions

Meringue Pie Shell

  • Preheat oven to 275 degrees.
  • Grease a 9-inch pie plate.
  • Combine the egg whites, salt, and cream of tartar in a bowl.
  • Beat until the egg whites are foamy.
  • Beat in the vanilla.
  • Add the sugar gradually, beating until stiff peaks are formed and the sugar is dissolved.
  • Spread the meringue in the bottom and up the sides of the well-greased 9-inch pie tin.
  • Sprinkle chopped walnuts on the bottom but not on the sides.
  • Bake at 275 degrees for 1 hour.
  • Cool the meringue pie shell completely before filling.

Filling

  • Beat softened butter with an electric mixer until fluffy.
  • Add the sugar gradually and beat until smooth.
  • Melt the chocolate in a double boiler over hot water.
  • Add the melted chocolate and vanilla to the creamed mixture. Beat until combined.
  • Add the eggs, one at a time, beating 4 minutes after each addition.
  • In a separate bowl, beat the heavy cream and creme de cocoa until stiff peaks form.
  • Fold the whipped cream into the chocolate mixture.
  • Spread the filling mixture into the meringue pie shell.

Topping

  • In a medium-sized chilled bowl, combine heavy whipping cream and powdered sugar.
  • Beat until firm and thick.
  • Add cream de cacao and mix until just blended.
  • Spread or pipe the whipped cream on top of the pie.

    This pie was really good! I used Chocolate flavoring instead of the creme de cacao. Next time I’ll try it with the cream de cacao.
