Toscana Pagila e Fieno

This pasta dish will remind you of a carbonara dish.  Toscana is found in New York City. Source: Benson and Hedges 100 Recipes from the 100 greatest restaurants. The book is currently out of print. Copies can occasionally be found on auction at www.ebay.com.

Toscana Pagila e Fieno

Yield: 2 to 4 servings.

3 oz. Green Noodles
3 oz. White Noodles
1 C. Whipping Cream
2 Tbsp. Butter
1/2 C. Cook Ham cut into Julianne strips
1/4 C. frozen Peas
1/2 C. grated Parmesan Cheese
2 well-beaten Egg Yolks

Cook noodles in boiling salted water until they are done. Meanwhile in a large saucepan, combine cream, butter, ham and peas; heat to met butter. Stir in cooked noodles. Cook about five minutes, until the noodles are well coated. Stir in cheese and egg yolks, cook until sauce has thickened.

    This was outstanding and easy to make! We really enjoyed it. This will become one of my standby meals when dinner is running late!
