What a wonderfully sweet smoothie, this is great as a breakfast alternative are a snack!
- 1 can unsweetened pineapple chunks -- 20 ounces
- 1 cup buttermilk
- 2 teaspoons vanilla extract
- 2 teaspoons liquid sweetener
- Mint leaves, optional
Drain pineapple, reserving 1/2 cup juice. Freeze pineapple chunks. Place juice, buttermilk, vanilla, sweetener and frozen pineapple into a blender. Blend until smooth. Pour into glasses and garnish with mint if desired. Serve immediately.Print Recipe
