Denny’s Chicken Fajita Breakfast Skillet

This is a favorite of ours. It is a really nice way to stretch those food budget dollars. On the menu you have the choice of any style of egg that you like. You can vary that; we chose scrambled eggs for our version. This is hearty enough to eat for dinner.

2 Boneless Skinless Chicken Breast
2 C. Home Fries or Hash browns
1 tsp. Fajita Seasoning
1 Small Bell Pepper
1 Small Onion
4 Eggs
1/4 C. Half and Half
1/2 C. Shredded Cheese
1/2 C. Sour Cream (optional)
1/2 C. Guacamole (optional)
Salt and Pepper
Salsa (optional)
Rub chicken breast with fajita seasoning and let marinade for 1/2 hour. Slice marinated chicken into strips. Use cooking spray and braise chicken in a hot skillet until done. Add onion and bell pepper to skillet fry and stir on high so as to cook quickly. Remove all from heat and set aside. Brown left over cooked potatoes or use frozen hash browns, cooked until desired crispness. Salt and pepper to you taste. Divide in half and place on serving platters. Mix egg with half and half, salt and pepper to taste. Cook egg mixture into two separate omelets. Place on top of browned potatoes. Place one half of cooked fajita meat and cooked onions and peppers on top of omelet. Sprinkle with 1/4 cup cheese on each platter of fajita platter. Serve with sour cream, guacamole, and salsa if you like.

    I have been looking for the recipe for Banana & Macadamia Nut Halibut served for years at Peohe’s on Coronado Island, San Diego and hoped someone might have an idea of the sauce. It’s to die for!

    Because its a copy cat! Wow!!! Anyone with any culinary experience can mimic a recipe for their own use. Working as a cook and chef for 20+ years, you can do anything.
    Get over it, and move on. Life’s to short to think people are constantly out to get you!!!

    I don’t have a problem with people developing their own recipes. When they download what I did, and then sell it for their own, then I have an issue. I don’t think people are out to get me, I find it annoying when they try to pass off my work as their own. Different issues.
