Thai Chicken Pizza Ingredients

For the Spicy Peanut Sauce, you’ll need:

  • Smooth peanut butter
  • Hoisin sauce
  • Honey
  • Red wine vinegar
  • Ginger, minced
  • Roasted sesame oil
  • Soy sauce
  • Vietnamese chili sauce 
  • Oyster sauce
  • Water

Organic smooth peanut butter without added sugars works well in this recipe. 

If you don’t have any Vietnamese chili sauce, you can substitute red pepper flakes and a little neutral oil. 

For the Thai chicken pieces, you’ll need:

  • Boneless and skinless chicken breast
  • Olive oil
  • Spicy Peanut Sauce

For assembling the Thai Chicken Pizza, you’ll need:

  • Pizza dough
  • Scallions or red onion
  • White bean sprouts
  • Matchstick carrots
  • Roasted peanuts
  • Chopped fresh cilantro
  • Cucumbers (optional)
  • Cornmeal 
  • Thai chicken pieces
  • Mozzarella cheese, shredded

How to Make CPK Thai Chicken Pizza

To cook the Thai Chicken pieces:

  1. Dice the boneless chicken breast into three-quarter-inch pieces. 
  2. Heat a saute pan over medium-high heat.
  3. Pour the olive oil into the pan, and when hot, add the chicken pieces.
  4. Saute the chicken for five to six minutes.

  1. Transfer the cooked chicken to a plate and allow it to come to room temperature before covering it with plastic wrap and chilling it in the fridge. While the chicken is in the refrigerator, it is a good time to make the Spicy Peanut Sauce below.
  2. Once the chicken is cold, toss it with half of the Spicy Peanut Sauce. Cover the bowl and return the coated chicken to the fridge until needed. 

To prepare the Spicy Peanut Sauce:

  1. Add all the ingredients for the sauce in a small saucepan.
  2. Heat over medium-low heat. 
  3. Use the end of a wooden cooking spoon to stir the sauce. At first, it will be very thick, but it will start to thin out. 
  4. Allow the sauce to simmer for about a minute while continuing to stir.

  1. Remove the saucepan from the heat and pour into a heat-resistant bowl to cool. 
  2. Cover and place in the fridge until needed. 

To assemble the pizza (this recipe makes one extra large or two medium pizzas):

  1. Preheat the oven to 425°F. If you are using a pizza stone, make sure it is in the oven while preheating.
  2. Remove the dough from the fridge. If you are making two medium pizzas, divide the dough in half. Roll each piece of dough into a ball and let the dough rest on the counter for about 30 minutes. While the dough is warming up, you have plenty of time to prep the toppings. 
  3. Rinse and drain the vegetables:
  4. Slice the scallions thinly on the diagonal. Julianne or cut the carrots into small pieces. Roughly cut the cilantro and crush the peanuts. If you want to use cucumbers (and you really should), peel and cut them in half. Use a spoon to scrape out the seeds and then chop the cucumber into half-inch cubes. 
  5. Press a ball of pizza dough into a disc. 
  6. Roll the dough into a round, thin crust. If you are good at tossing pizza, you can use that method instead.
  7. Spread some cornmeal on the back of a clean baking tray or pizza peel. Transfer the pizza crust on top of the cornmeal. 
  8. Spread a thin coating of Spicy Thai Peanut Sauce on the crust. 
  9. Top the crust with mozzarella cheese and Thai Chicken pieces. At this point, some people like to add the vegetable toppings. If that’s you, spread the green onions, bean sprouts, and carrots over the pizza. Other people prefer to wait to add the veggies until after the pizza comes out of the oven to keep them crunchy. Do it your way.

  1. Bake the pizza in the oven for about 10 minutes. 
  2. Remove and top the pizza with fresh vegetables if you didn’t add them before, chopped cilantro, crushed peanuts, and diced cucumbers if you want to use them.

How to Store Chicken Thai Pizza

Let any leftover pizza cool to room temperature, then store the slices in an airtight container in the fridge for up to three days. 

How to Reheat Thai Chicken Pizza

Thai Chicken Pizza is best fresh out of the oven, but you can reheat it in the oven:

  1. Preheat the oven to 400°F.
  2. Remove any raw vegetables from the top of the pizza and reserve them for later. 
  3. Place the pizza on a baking sheet and cover with aluminum foil. 
  4. Heat for 6 to 8 minutes or until hot. 
  5. Replace the raw vegetables on the pizza before serving.

Ingredients

Spicy Peanut Sauce

  • 1/2 cup peanut butter
  • 1/2 cup hoisin sauce
  • 1 tablespoon honey
  • 2 teaspoons red wine vinegar

  • 2 tablespoons roasted sesame oil
  • 2 teaspoons soy sauce
  • 1 teaspoon Vietnamese chili sauce or dried chili flakes
  • 1 tablespoon oyster sauce
  • 2 tablespoons water

Thai Chicken

  • 10 ounces boneless skinless chicken breast cut into 3/4-inch cubes
  • 1 tablespoon olive oil
  • 1/4 cup spicy peanut sauce

Pizza

  • 2 tablespoons cornmeal for handling
  • 16 ounces pizza dough
  • 2 cups shredded mozzarella cheese
  • 1/4 cup diagonally sliced scallions
  • 1/2 cup white bean sprouts
  • 1/4 cup shredded carrots
  • 1/4 cup chopped roasted peanuts
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons chopped cucumbers optional

Instructions

Spicy Peanut Sauce

  • Combine all the sauce ingredients in a small saucepan over medium heat and bring to a boil.
  • Boil gently for 1 minute. Set aside.

Thai Chicken

  • Sauté the chicken in the olive oil in a pan over medium-high heat until just cooked, about 5 to 6 minutes. Do not overcook.
  • Refrigerate the chicken until chilled.
  • Once chilled, coat the chicken with 1/4 cup of spicy peanut sauce and return to the refrigerator.

Pizza

  • Preheat the oven to 425°F. If using a pizza stone, make sure it is in the oven while it is preheating. Spread cornmeal on a pizza peel or the back of a baking tray to easily transfer the pizza to the oven.
  • Stretch and press 8 ounces of pizza dough to form a round thin crust. Transfer the rolled-out dough to a pizza pan or pizza peel.
  • Use a large spoon to spread 1/4 cup of the spicy peanut sauce evenly over the dough, leaving the edge of the crust uncovered.
  • Cover the sauce with 3/4 cup of mozzarella.
  • Distribute half the chicken pieces over the cheese, followed by half the green onions, bean sprouts, and carrots, respectively.
  • Sprinkle an additional 1/4 cup of mozzarella over the toppings, followed by 1 tablespoon of chopped peanuts.
  • Transfer the pizza to the oven and bake until the crust is crisp and golden and the cheese is bubbly, about 9 to 10 minutes.
  • Remove the pizza from the oven and sprinkle with 1 tablespoon of chopped cilantro.
  • Repeat with the remaining ingredients for a second pizza.

    Delicious! We made it last night. We halved the recipe and for our pizzas (which we use 8 oz of dough we got at Trader Joes) we had enough for two. Rich, flavorful sauce. We have an outdoor Bertello pizza oven that gets to 900 degrees, and it cooked great in that. Thanks for a wonderful recipe. Oh, we did add 1 tsp of minced garlic to the sauce as we love garlic.)
