Luby's Stuffed Jalapeno Peppers

These are delicious and easy to make, and can be made ahead of time.


  • 1 can (26 ounce) whole jalapenos, sliced in half by length and seeds removed
  • 1 8 ounce package softened cream cheese
  • 2 tablespoons dehydrated chives
  • 1 tablespoon minced pimiento peppers
  • 1/4 cup mayonnaise


Leave cream cheese out of refrigerator to soften. Once softened whip cream cheese and add the following; mayonnaise, chives, pimientos. Blend together until smooth and fluffy. Fill jalapenos with cream cheese mixture and enjoy. You may have to double this one--you can't eat just one! These would be a nice party buffet fill-in or a side dish for an office luncheon. Cover and store remaining jalapenos in refrigerator.

    Not very hot but very good. I like this recipe because the young grandchildren really ate them up, even the 4 year old.

      they are much like fresh that are cleaned of seeds and membranes. A good appetizer for all ages.

      Those pickled peppers don’t have a lot of heat!
