Sometimes a restaurant offers something that is unique and tasty. These peppers are so good, you won’t be able to stop eating them. We know that our test kitchen fell in love with these.

Luby’s Stuffed Jalapenos
Luby's Stuffed Jalapeno Peppers
These are delicious and easy to make, and can be made ahead of time.
Ingredients
- 1 can (26 ounce) whole jalapenos, sliced in half by length and seeds removed
- 1 8 ounce package softened cream cheese
- 2 tablespoons dehydrated chives
- 1 tablespoon minced pimiento peppers
- 1/4 cup mayonnaise
Instructions
Leave cream cheese out of refrigerator to soften. Once softened whip cream cheese and add the following; mayonnaise, chives, pimientos. Blend together until smooth and fluffy. Fill jalapenos with cream cheese mixture and enjoy. You may have to double this one--you can't eat just one! These would be a nice party buffet fill-in or a side dish for an office luncheon. Cover and store remaining jalapenos in refrigerator.
